Ingredients (view qty in metric system instead)
2 tbsp. soy sauce 2 tbsp. sweet sherry 1 tbsp. sugar 1 tbsp. rice wine vinegar 1 1/2 tsp. peeled, finely chopped fresh ginger 1 clove garlic, peeled and chopped 1/2 tsp. Chinese 5 spice powder 4 salmon fillets, about 6 ounces each 8 ounces Japanese soba(buckwheat) noodles 1/2 cup prepared Thai style peanut sauce 3 green onions, sliced
Directions
Whisk together soy sauce, sherry, sugar, rice vinegar, ginger, garlic and 5 spice powder in a small bowl. Place the salmon fillets into a large resealable plastic bag. Pour 1/2 of the soy sauce mixture into the bag and turn to coat salmon. Refrigerate salmon 1 hour. Meanwhile, heat a large saucepan of lightly salted water to a boil. Add soba noodles and boil, stirring frequently, until just tender. Drain noodles and cool under running water. Drain noodles again and reserve in a medium bowl.
Preheat broiler. Remove the salmon fillets from the marinade and place skin side down on a broiler pan. Broil salmon about 6 inches from the heat about 6 minutes until salmon is cooked through. Add peanut sauce, reserved soy sauce mixture and green onions to the soba noodles and toss to coat. Divide the noodles between 4 plates. Place salmon fillets over the noodles and serve immediately.
Serves 4.
