Ingredients (view qty in metric system instead)
1 1/4 pounds sea scallops 2 tbsp. margarine 1 cup sliced leeks, white part only 1 1/2 tsp. peeled, grated fresh ginger 4 cups vegetable broth 1 cup sugar snap peas 1/4 cup lite soy sauce 3 tbsp. cornstarch
Directions
Melt margarine in a large skillet over medium-high heat. Add scallops and brown on both sides. Remove scallops from pan and set aside. Add leeks and ginger to skillet and cook 3 to 4 minutes until tender. Add broth and snap peas. Cover and simmer 4 minutes. Stir together soy sauce and cornstarch in a small bowl until smooth. Add to skillet and cook, stirring, until thickened and smooth. Return scallops to pan and heat through.
Serves 4 to 6.
