Ingredients (view qty in metric system instead)
2 pork tenderloins, 8 to 10 ounces each 2 tsp. grated orange peel 1 tsp. dried thyme 1/2 tsp. pepper 1 1/2 tsp. minced garlic 1/3 cup fresh orange juice 2 tbsp. rice vinegar 2 tbsp. vegetable oil 2 tbsp. honey
Directions
Mash orange peel, thyme, pepper and garlic into a paste and rub all over pork. Place pork in a bowl. Stir together orange juice and vinegar. Pour over pork, turning to coat. Cover and refrigerate pork at least 2 hours or overnight. Preheat oven to 425 degrees. Brush heavy baking pan with oil. Place pan in oven for 3 to 4 minutes to warm. Place pork in pan. Drizzle pork with 1 tbsp. honey. Roast 10 minutes. Spoon pan juices over and drizzle with 1 tbsp. honey. Roast 20 to 25 minutes longer to desired doneness, basting once or twice. Let stand 5 minutes before slicing.
Serves 4 to 6.
