Ingredients (view qty in metric system instead)
1/2 cup butter, softened 1 cup sugar 2 large eggs 1 cup buttermilk 1 tsp. baking soda 2 cups + 2 tbsp. all purpose flour 1 cup shredded sweetened coconut 1/2 cup chopped dates 1 1/2 cups chopped pecans 1 small package orange slice candy, finely chopped
Directions
Preheat oven to 350 degrees. Cream together butter, sugar and eggs in a large bowl. Add buttermilk. Sift together baking soda and 2 cups flour. Add to batter. Stir together coconut, dates, pecans, candy and 2 tbsp. flour. Stir into batter until well mixed. Transfer batter to a greased bundt pan and bake about 60 minutes, until a tester comes out clean. Cool in pan. Invert to unmold.
Serves 10 to 12.
