Ingredients (view qty in metric system instead)
10 ounces carrots, peeled and sliced 3/4 cup solid vegetable shortening 3/4 cup sugar 1 large egg, beaten to blend 1 tsp. vanilla extract 2 cups all purpose flour 1 tsp. baking powder 1/2 tsp. salt 2/3 cup chopped walnuts 1 cup powdered sugar 2 tbsp. orange juice 1/4 tsp. finely grated orange peel
Directions
Place carrots in a large saucepan with water to cover. Boil carrots about 15 minutes until tender. Drain carrots and puree in a food processor. Preheat oven to 350 degrees. Grease 2 sheet pans. Combine shortening and sugar in a large bowl and beat until smooth. Beat in egg and vanilla. Stir together flour, baking powder and salt in a medium bowl. Beat the flour mixture alternately into the batter with the carrot puree. Stir in walnuts. Drop the dough by rounded tablespoonfuls onto the prepared pans. Bake cookies about 20 minutes until lightly browned and springy to the touch. Stir together the powdered sugar, orange juice and peel until smooth. Spread the glaze over the warm cookie. Cool cookies completely.
Makes about 2 1/2 dozen cookies.
