Onion-Stuffed Rabbit Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 pound rabbit, skinned and dressed
1 1/2 tsp. salt
1/8 tsp. pepper
1 large onion, peeled and sliced
3 slices bacon

Directions
Preheat oven to 350 degrees. Stir together salt and pepper in a small bowl. Rub mixture inside rabbit cavity. Stuff with onion slices and truss with kitchen string to close. Place bacon slices over rabbit and wrap in foil. Place in a shallow baking pan. Bake about 90 minutes until rabbit is tender and cooked through.

Serves 2 to 3.
