Ingredients (view qty in metric system instead)
4 medium onions, peeled and sliced into 1/4 inch thick rings 1 red bell pepper, stemmed seeded, halved and thinly sliced 1 yellow bell pepper, stemmed, seeded, halved and thinly sliced 2 medium tomatoes, stemmed and chopped 9 tbsp. olive oil, divided 1 tsp. dried thyme, divided 1/2 tsp. salt 1/4 tsp. pepper 2 cloves garlic 1 loaf french bread
Directions
Heat 2 tbsp. oil in a large skillet. Add onions, peppers and 1/2 tsp. thyme. Cover and cook, stirring occasionally, until tender, about 20 minutes. Preheat oven to 450 degrees. Cut french bread in half lengthwise. Then cut in half crosswise. Brush 2 tbsp. oil over cut sides of bread. Crush garlic and spread over bread. Toast bread 5 minutes on a baking sheet. Divide onion-pepper mixture and tomatoes evenly over bread. Sprinkle with remaining 1/2 tsp. thyme, salt and pepper. Drizzle with remaining oil. Bake about 5 minutes until vegetables are heated through.
Serves 4.
