Ingredients (view qty in metric system instead)
1/2 cup butter 1 1/2 cups peeled, chopped onion 3/4 cup julienned carrots 12 ounces fresh broccoli florets, cut into 1 inch pieces 8 ounces sliced fresh mushrooms 1 1/4 cup yellow squash, thinly sliced and halved 1 tsp. minced garlic 1 1/2 cups water 1 tbsp. beef bouillon granules 1/4 cup oil-packed sun dried tomatoes, minced 1 1/4 cups canned crushed tomatoes in puree 1 tbsp. finely chopped fresh parsley 1/4 tsp. dried oregano 1/4 tsp. ground dried rosemary 1/8 tsp. crushed red pepper flakes 1 pound cooked angel hair pasta 1/2 cup grated parmesan cheese
Directions
Melt butter in a dutch oven over medium heat. Add onions, carrots and broccoli and saute' 5 minutes. Add mushrooms, squash and garlic and cook 2 minutes longer. Add water, bouillon, sun-dried tomatoes, canned tomatoes, parsley, oregano, rosemary and pepper flakes. Stir well and bring to a simmer. Simmer 8 to 10 minutes until vegetables are tender. Serve over cooked pasta and sprinkle with parmesan.
Serves 4.
