Ingredients (view qty in metric system instead)
one 10 to 12 inch sponge cake, about 3 inches high 3 ounces strong brewed black coffee 3 ounces brandy 24 ounces marscapone cheese, room temperature 1 1/2 cups powdered sugar cocoa powder
Directions
Cut sponge cake crosswise to form 2 layers. Stir together coffee and brandy in a small bowl. Sprinkle mixture over cut-side of each cake layer. Beat together marscapone and 1 cup powdered sugar in a large bowl until smooth and spreadable. Taste mixture for sweetness, adding more sugar if necessary. Spread cut surface of moistened cake layer with half of marscapone mixture. Top with remaining cake layer and spread with remaining marscapone mixture. Sift cocoa powder liberally over top of cake. Refrigerate at least 2 hours before cutting and serving.
Serves 8 to 10.
