Ingredients (view qty in metric system instead)
4 boneless skinless chicken breast halves, pounded to 1/4 inch thick 1/4 cup Wondra flour 1/2 tsp. salt 1/8 tsp. pepper 1/2 tsp. dried oregano 4 tbsp. olive oil 4 tbsp. butter or margarine 1 cup sliced fresh mushrooms 1/2 cup marsala wine
Directions
Stir together flour, salt, pepper and oregano in a pie plate. Heat a large skillet over medium-high heat. Add oil and butter. Dredge chicken breasts in flour mixture and add to skillet. Cook 2 minutes on 1 side until lightly browned. Turn chicken over and spoon mushrooms around the chicken. Cook 2 minutes until lightly browned. Stir the mushrooms and add marsala. Reduce heat, cover and simmer 10 minutes.
Serves 4.
