Ingredients (view qty in metric system instead)
4 ounce boneless skinless chicken breast 1 tbsp. olive oil 2 tbsp. diced onion 1 tsp. minced fresh garlic 1 cup canned diced tomatoes, drained 1/8 tsp. salt 1/2 tsp. dried basil 1/2 cup shredded Fontinella cheese 1/2 cup shredded mozzarella cheese 1/2 cup sliced fresh mushrooms 1 tbsp. shredded parmesan cheese 12 inch prebaked pizza crust
Directions
Preheat oven to 450 degrees. Bake chicken 10 to 15 minutes until cooked through. Cool chicken and cut into 1/4 inch thick strips. Grease a 12 inch pizza pan. Place pizza crust on pan. Heat oil in a large skillet. Add onion and garlic and cook, stirring frequently, 3 minutes. Stir in tomatoes, salt and basil. Spread tomato mixture over pizza crust, leaving a 1 inch margin. Lay chicken strips over sauce. Sprinkle Fontinella, mozzarella evenly over crust. Sprinkle mushrooms over. Sprinkle evenly with parmesan. Bake pizza about 8 to 10 minutes until cheese is melted and crust is hot.
Serves 4 to 6.
