Old Fashioned Oatmeal with Apples, Raisins and Walnuts

Ingredients (view qty in metric system instead)
1/4 cup chopped walnuts 1 tbsp. honey 3 cups water 2 cups old fashioned oats 1 tsp. salt 1 cup unsweetened apple juice 1 cup peeled, diced apple 1/4 cup brown sugar 1/4 cup raisins 1/2 tsp. ground cinnamon
Directions
Place walnuts in a small skillet over medium heat. Cook, shaking frequently, about 3 minutes until walnuts are lightly toasted. Drizzle honey over walnuts and cook, stirring, 2 minutes until nuts are glazed. Remove pan from the heat and cool walnuts. Heat water to a boil in a large saucepan. Reduce heat to medium and add oats and salt. Cook, stirring, about 5 minutes until oats are tender and very thick. Stir in apple juice, diced apple, brown sugar, raisins and cinnamon. Reduce heat, cover and simmer about 5 minutes until apples are tender. Divide oatmeal between 4 bowls, sprinkle glazed walnuts over and serve.
Serves 4.
