Ingredients (view qty in metric system instead)
Crust: 1 cup all purpose flour 2 tbsp. brown sugar 1/4 cup chopped pecans 1/2 tsp. salt 1/2 tsp. ground cinnamon 1/4 cup cold butter, diced 1/4 cup solid vegetable shortening 1/4 cup old fashioned oats 1 to 2 tbsp. water
Filling: 5 Pippin or Granny Smith apples, peeled, cored and thinly sliced 1/4 cup sugar 1 tbsp. all purpose flour 1 tsp. ground cinnamon pinch ground nutmeg
Topping: 1/2 cup all purpose flour 1/4 cup brown sugar 1 tsp. ground cinnamon 1/4 tsp. salt 6 tbsp. cold butter, diced 1/2 cup old fashioned oats 3 tbsp. chopped pecans
Directions
For Crust: Combine flour, brown sugar, pecans, salt and cinnamon in a food processor. Pulse to blend. Add butter and shortening. Blend until coarse crumbs form. Add oats and 1 tbsp. water and blend until moist clumps form, adding additional 1 tbsp. water if dough is crumbly. Form dough into a ball and flatten to a disc. Wrap and refrigerate dough 30 minutes.
Roll out dough to an 11 inch round between sheets of wax paper. Invert dough into a 9 inch glass pie dish. Trim overhang and crimp edges. Use dough scraps to repair any tears in crust. Refrigerate crust while preparing filling and topping.
For Filling: Combine apple slices, sugar, flour, cinnamon and nutmeg in a large bowl. Toss to blend.
For Topping: Preheat oven to 400 degrees. Combine flour, brown sugar, cinnamon and salt in a food processor. Add butter, oats and pecand and blend until moist clumps form.
Spoon filling into prepared crust. Sprinkle topping evenly over filling. Bake pie 20 minutes. Cover edges with foil and continue baking about 35 minutes until apples are tender and bubbly and topping is golden brown. Cool slightly before slicing and serving. Serve warm or at room temperature.
Serves 6 to 8.
