Old Fashioned Fried Chicken with Pepper Pan Gravy Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
Fried Chicken:
3 1/2 pounds chicken pieces
1 small lemon, cut in half
3 cups milk
1 1/2 tsp. coarse salt
2 tsp. pepper
1 cup all purpose flour
1/8 tsp. cayenne pepper
3 cups solid vegetable shortening

Pan Gravy:
2 tbsp. all purpose flour
2 cups milk
2 tsp. coarse ground black pepper
1/8 tsp. cayenne pepper
1 1/4 tsp. Worcestershire sauce
1 tbsp. lemon juice


Directions
For Fried Chicken:
Rub the chicken pieces all over with the lemon halves. Place the chicken in a large bowl and pour the milk over. Cover and refrigerate at least 4 hours or overnight.

Remove chicken from the refrigerator and let stand 1 hour. Combine flour, salt, pepper and cayenne in a paper bag. Add chicken, 2 pieces at a time, and shake to coat. Transfer coated chicken pieces to a wax paper lined sheet pan. Heat shortening in a large cast iron skillet over medium high heat. Add chicken pieces to skillet, cover and cook 15 minutes. Turn chicken over and fry, uncovered, about 15 minutes until cooked through. Drain chicken on paper towels.

For the Gravy:
Pour off all but 2 tbsp. fat from skillet. Add flour to skillet and cook, stirring, over low heat about 2 minutes until lightly browned. Increase heat to medium and whisk in milk, pepper and cayenne. Heat to a boil. Stir in Worcestershire and simmer about 1 minute until thickened. Stir in lemon juice and serve.

Serve fried chicken with pan gravy.

Serves 4.
