Ingredients (view qty in metric system instead)
Filling: 1 pound pitted dates 1 cup brown sugar 2/3 cup water 1 tsp. vanilla extract
Crust: 1 1/2 cups old fashioned oats 1 1/2 cups all purpose flour 1 cup brown sugar 1/2 tsp. baking soda 1 cup cold butter, diced
Directions
For Filling: Combine dates, brown sugar, water and vanilla in a medium saucepan and heat to a simmer. Simmer 1 minute, stirring to dissolve sugar. Transfer date mixture to a food processor and puree. Scrape puree into a medium bowl and cool.
For Crust: Preheat oven to 350 degrees. Butter a 9x13 inch baking pan. Stir together oats, flour, sugar and baking soda in a medium bowl. Add butter and rub in with your fingers until coarse crumbs form. Press half of the crust mixture evenly into the bottom of the prepared pan. Spread the cooled date mixture over the crust. Sprinkle remaining crumb mixture evenly over the filling. Bake about 35 to 40 minutes until crumb topping is golden brown. Cool bars in pan. Cut into squares and serve.
Makes about 2 dozen bars.
