Ingredients (view qty in metric system instead)
4 cups whole milk 1/2 cup long grain rice 1/2 tsp. salt 1/3 cup sugar 3 large egg whites 1 large egg yolk 1/2 cup raisins 1 tsp. grated lemon peel 2 tsp. vanilla extract
Directions
Bring 3 cups milk, rice and salt to boil. Cover and simmer until rice is tender and milk is absorbed, stirring frequently, about 30 minutes. Reserve. Beat together sugar, whites and yolk, 1 minute. Stir in 1 cup milk. Stir into rice mixture along with raisins and lemon peel. Cook, stirring constantly, over low heat until thickened. Remove from heat and stir in vanilla. Cool to room temperature. Cover and refrigerate until cold.
Serves 4 to 6.
