Ingredients (view qty in metric system instead)
1 1/2 cups granulated sugar 1 cup brown sugar 3/4 cup water 2/3 cup dark corn syrup 1 tsp. salt 1 tbsp. margarine 1 tsp. baking soda 1 tsp. vanilla extract 6 quarts freshly popped popcorn
Directions
Combine both sugars, water, syrup and salt in a large saucepan over medium heat. Bring to a boil. Continue boiling until mixture reaches 300 degrees, stirring frequently. Remove the pan from the heat and stir in margarine, soda and vanilla. Place the popcorn in a large bowl and pour the caramel mixture over, stirring constantly. Stir until the popcorn is evenly coated. Spread the popcorn out onto a large piece of wax paper and let cool. Break into pieces. Store caramel corn in an airtight container in a cool place.
Makes about 6 quarts caramel corn.
