Ingredients (view qty in metric system instead)
3 slices bread, torn into pieces 3 tbsp. olive oil, divided 2 tsp. finely grated lemon peel 1 clove garlic, peeled and minced 1 tbsp. butter 1 large sweet onion, peeled and thinly sliced 6 large tomatoes, halved and sliced 1/2 inch thick 1 tsp. dried thyme 1 tsp. salt 1/4 tsp. pepper 1/2 cup grated Parmesan cheese
Directions
Preheat oven to 400 degrees. Combine bread pieces, 1 tbsp. olive oil, lemon peel and garlic in a food processor and blend to fine crumbs. Combine remaining 2 tbsp. olive oil and butter in a large skillet over medium high heat. Add sliced onion and cook about 5 minutes until just tender, stirring frequently. Reduce heat to medium low and continue cooking onion about 15 to 20 minutes until soft and browned. Remove the pan from the heat. Grease the inside of a large gratin or baking dish. Sprinkle 2 tbsp. of the breadcrumb mixture over the bottom of the prepared dish. Spread the onions evenly over the bottom of the dish. Layer yje tomato slices tightly over the onion. Srinkle the tomatoes with thyme, salt, pepper and Parmesan. Sprinkle the remaining breadcrumb mixture evenly over the top. Bake gratin about 30 to 40 minutes until tomatoes are tender and crumb topping is golden brown. Serve hot.
