Ingredients (view qty in metric system instead)
2 cups dried Great Northern beans, picked through and rinsed 6 cups cold water 8 ounces link Italian sausage, sliced 1/4 inch thick 1/2 cup olive oil 1 cup chopped onion 2 cloves garlic, peeled and minced 1 cup chopped celery 1/2 tsp. dried thyme 1/4 tsp. crumbled dried basil 1/4 tsp. crumbled dried oregano 16 ounce can tomato paste 1 tsp. salt 1/4 cup grated Parmesan cheese
Directions
Combine beans and water in a small saucepan. Heat to a boil. Reduce heat and simmer until beans are barely tender, about 90 minutes. Drain beans, reserving 2 cups liquid. Pour beans into a 2 quart casserole dish. Preheat oven to 350 degrees. Heat oil in a medium skillet. Add sliced sausage and brown lightly. Add onion, garlic and celery and cook until tender, stirring frequently. Stir in thyme, basil, oregano, salt, reserved bean cooking liquid and tomato paste until well combined. Pour sausage mixture over beans in casserole dish. Stir gently. Cover with foil and bake 1 hour, adding more liquid if necessary. Uncover casserole and sprinkle Parmesan over top. Bake an additional 5 to 10 minutes until Parmesan is melted and lightly browned. Let casserole stand 5 minutes before serving.
Serves 6.
