Ingredients (view qty in metric system instead)
BBQ Sauce: 2 quarts cider vinegar 1 quart white vinegar 1 cup crushed red pepper flakes 1/4 cup cayenne pepper 1/4 cup pepper 1 cup salt
Pork: 8 to 10 pound pork butt roast 1/2 cup worcestershire sauce 2 tbsp. cracked black peppercorns
Directions
For BBQ Sauce: Combine cider vinegar, white vinegar, red pepper flakes, cayenne, pepper and salt in a glass bowl. Stir well to mix. Cover and let stand in a cool, dry place for one week, stirring once every day.
For Pork: Rub pork all over with worcestershire and cracked pepper. Smoke pork at 250 to 300 degrees for 8 to 12 hours until very tender. Pull meat and dress with BBQ sauce to taste.
Makes about 25 servings.
