New Wave Chicken and Provolone Cheese Sandwiches

Ingredients (view qty in metric system instead)
12 slices whole wheat bread 12 thin slices Provolone Cheese 4 cooked boneless skinless chicken breast halves, chopped 1/3 cup golden raisins 1/4 cup thinly sliced celery 2 tbsp. thinly sliced green onions 1/3 cup prepared mayonnaise
Directions
Heat a large skillet over medium high heat. Lightly coat 1 side of each bread slice with cooking spray. Place 6 bread slices, coated side down, in the preheated skillet. Place 1 slice Provolone cheese on each bread slice. Stir together chopped chicken breasts, raisins, celery, green onions and mayonnaise in a medium bowl. Divide chicken mixture between bread slices in skillet and spread evenly. Top with remaining Provolone slices. Top with remaining 6 bread slices, coated side up. Cook sandwiches about 3 to 4 minutes per side until lightly browned. Serve immediately.
Makes 6 sandwiches.
