Ingredients (view qty in metric system instead)
1 1/2 cups soft, fresh bread crumbs 1 stalk celery, diced 1 1/4 pounds fresh or frozen, thawed boneless cod fillets, cubed 1/2 cup chopped green onions 1/2 tsp. dried thyme 1 large egg 3/4 tsp. salt 1/2 tsp. pepper 4 tbsp. olive oil
Directions
Place bread crumbs in a large bowl. Finely chop the celery in a food processor. Stir the celery into the bread crumbs. Place the fish in the food processor and chop finely. Add the chopped fish to the breadcrumbs and stir to combine. Gently stir in green onions, thyme, egg, salt and pepper. Form the fish mixture into four, 1/2 inch thick patties. Heat the olive oil in a large skillet over medium heat. Add cod cakes and cook about 5 minutes per side until browned and cooked through. Serve cod cakes immediately.
Serves 4.
