Ingredients (view qty in metric system instead)
Filling: 4 pounds nectarines, cut into wedges 3/4 cup sugar 1/3 cup all purpose flour 2 tbsp. fresh lemon juice
Topping: 2 1/4 cups all purpose flour 6 tbsp. sugar, divided 1 tbsp. baking powder 1/4 tsp. salt 1/4 cup cold butter, diced 1/4 cup cold solid vegetable shortening, diced 1 large egg, beaten to blend 3/4 cup buttermilk

Directions
For Filling: Preheat oven to 400 degrees. Toss together nectarines, sugar, flour and lemon juice in a large bowl. Transfer mixture to a 13x9 inch glass baking dish. Bake filling 15 minutes.
For Topping: Mix together flour, 4 tbsp. sugar, baking powder and salt in a large bowl. Cut in butter and shortening until a coarse meal forms. Stir in egg and buttermilk to form a batter. Spoon 12 mounds of batter over hot filling. Sprinkle remaining 2 tbsp. sugar over. Bake about 30 minutes until filling is thickened and topping is golden. Cool at least 15 minutes on a rack before serving. Serve cobbler with vanilla ice cream if desired.
Serves 8.
