Nana's Italian Ricotta Cheese and Almond Cookies

Ingredients (view qty in metric system instead)
1 cup butter, room temperature 1 cup sugar 8 ounces whole milk ricotta cheese, drained 1 extra large egg 1 tsp. vanilla extract 1/2 tsp. salt 2 cups all purpose flour 1/2 tsp. baking soda 1/2 cup chopped almonds
Directions
Preheat oven to 350 degrees. Grease a large sheet pan. Cream together butter and sugar in a large bowl. Stir together ricotta, egg, vanilla and salt in a separate bowl. Beat ricotta mixture into butter until just blended. Sift together flour and baking soda in a medium bowl. Stir flour mixture into the batter until blended. Drop the batter by heaping tablespoonfuls onto the prepared pan, spacing 1 1/2 inches apart. Bake cookies about 12 minutes until tops are dry and bottoms are lightly browned. Cool cookies 2 minutes on the pan. Transfer cookies to a rack and cool completely. Store cookies at room temperature in an airtight container.
Makes about 3 dozen cookies.
