Ingredients (view qty in metric system instead)
Cake: 6 ounces chopped semisweet chocolate 1/2 cup butter, diced 4 ounces blanched almonds 3/4 cup sugar, divided 6 large eggs, whites and yolks separated pinch salt
Glaze: 4 ounces chopped semisweet chocolate 1/3 cup heavy whipping cream
Directions
For Cake: Preheat oven to 350 degrees. Grease the inside of an 8 inch springform pan. Combine chocolate and butter in the top of a double boiler over simmering water. Melt, stirring frequently, until smooth. Remove the chocolate mixture from over the simmering water. Cool chocolate to room temperature. Combine almonds and 1/4 cup sugar in a food processor and grind finely. Combine the egg yolks and remaining sugar in a large bowl. Beat until ribbons form. Fold in the melted chocolate then the ground almonds. Combine egg whites and salt in a medium bowl and beat to soft peaks. Fold the beaten whites into the chocolate batter in 3 additions. Pour the batter into the prepared pan. Bake cake about 50 minutes until just firm. Transfer pan to a rack and cool completely. Carefully remove pan sides.
For Glaze: Place chocolate in a medium bowl. Place cream in a small saucepan and bring to a boil over medium heat. Pour the hot cream over the chocolate and let stand 30 seconds. Whisk the glaze until smooth. Spread the glaze evenly over the cake.
Serves 6 to 8.
