Ingredients (view qty in metric system instead)
2 pounds red potatoes, scrubbed 1 cup zesty Italian salad dressing 1/2 tsp. paprika 1/2 tsp. cayenne pepper 8 slices thick cut bacon 1 medium onion, peeled and chopped 2 stalks celery, thinly sliced 4 shelled hard boiled eggs, chopped
Directions
Place potatoes in a large saucepan with water to cover. Boil until potatoes are tender. Drain potatoes and cool. Cut potatoes into cubes. Combine cubed potatoes, salad dressing, paprika and cayenne pepper in a large bowl. Meanwhile, cook bacon in a large skillet until crisp. Transfer bacon to paper towels to drain. Pour off all but 1 tbsp. bacon drippings from skillet. Add onion and celery to skillet and cook, stirring, until crisp-tender. Add onion, celery, bacon and hard boiled eggs to potato mixture. Toss lightly to blend.
Serves 6 to 8.
