Ingredients (view qty in metric system instead)
3 cups all purpose flour 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1 cup canned solid pack pumpkin puree 1 cup sugar 1/2 cup milk 2 large eggs 1/4 cup butter, room temperature 1 cup chopped pecans
Directions
Preheat oven to 350 degrees. Grease the inside of a 9x5 inch loaf pan. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg in a large bowl. Add pumpkin, sugar, milk, eggs and butter and mix until well blended. Stir in pecans. Spread the batter evenly in the prepared pan. Bake bread about 45 to 55 minutes until a toothpick comes out clean. Transfer the pan to a rack and let bread cool 15 minutes. Invert the pan and remove bread. Cool bread completely. Store bread tightly wrapped in the refrigerator or at room temperature.
Makes 1 loaf.
