Ingredients (view qty in metric system instead)
Crust: 2 cups all purpose flour 1/2 cup sugar 1/8 tsp. salt 3/4 cup butter
Filling: 1 cup brown sugar 1 cup light corn syrup 1/2 cup butter 4 large eggs, beaten to blend 2 1/2 cups finely chopped pecans 1 tsp. vanilla extract
Directions
For Crust: Preheat oven to 350 degrees. Grease the inside of a 9x13 inch baking pan. Stir together flour, sugar and salt in a large bowl. Cut in butter until crumbs form. Press the crumbs firmly into the bottom of the prepared pan. Bake crust about 17 to 20 minutes until lightly browned. Transfer crust to a rack.
For Filling: Combine brown sugar and corn syrup in a medium saucepan over medium heat. Bring to a boil, stirring constantly. Remove the pan from the heat. Place the eggs in a large bowl. Stir 1/4 of the hot corn syrup mixture into the eggs. Stir in the remaining mixture. Stir in the pecans and vanilla. Pour the filling over the prepared crust. Bake about 25 minutes until center is set. Transfer pan to a rack and cool completely. Cut into bars.
Makes about 2 dozen bars.
