Ingredients (view qty in metric system instead)
1 pound ground chicken breast 1/3 cup minced onion 1/3 cup minced celery 3/4 cup finely crushed corn bread stuffing mix, divided 6 tbsp. olive oil, divided 1 tbsp. lemon juice 1 tsp. salt 3/4 tsp. pepper hamburger buns
Directions
Combine ground chicken, onion, celery, 1/4 cup stuffing mix, 2 tbsp. oil, lemon juice, salt and pepper in a large bowl. Mix well. Form chicken mixture into eight, 1/2 inch thick patties. Lay patties on a cutting board and sprinkle 1/4 cup stuffing mix over, pressing lightly to adhere. Turn chicken patties over and sprinkle with another 1/4 cup stuffing mix. Press lightly to adhere. Heat 2 tbsp. oil in a large skillet over medium high heat. Add 4 patties and cook about 2 1/2 minutes per side until browned and cooked through. Transfer burgers to a plate. Add remaining 2 tbsp. oil to skillet. Add remaining 4 chicken patties and cook until done. Transfer burgers to buns and serve.
Makes 8 burgers.
