Ingredients (view qty in metric system instead)
two 20 ounce cans crushed pineapple 2/3 cup sugar 2 tbsp. all purpose flour 2 large eggs, beaten to blend 1/4 cup orange juice 3 tbsp. lemon juice 1 tbsp. vegetable oil two 17 ounce cans fruit cocktail, drained two 11 ounce cans mandarin oranges, drained 2 ripe bananas, peeled and sliced 2 cups whipped cream
Directions
Drain pineapple, reserving 1 cup juice in a small saucepan. Add sugar, flour, eggs, orange juice, lemon juice and oil to saucepan and bring to a boil, stirring constantly. Boil 1 minute. Remove pan from the heat and cool completely. Combine crushed pineapple, fruit cocktail, mandarin oranges and sliced bananas in a large bowl. Fold in the cooled pineapple juice mixture and whipped cream. Cover and refrigerate 3 hours before serving.
Serves 12 to 16.
