Ingredients (view qty in metric system instead)
4 cups freshly cooked rice 2 cups sliced fresh mushrooms 3 cups mild or spicy salsa 1 can cream of chicken soup 1 cup sour cream 1/2 cup chicken broth 1 1/2 pounds boneless, skinless chicken breast halves, cut into 1 inch strips
Directions
Preheat oven to 350 degrees. Coat the inside of a 9x13 inch baking dish with cooking spray. Stir together rice, mushrooms, salsa, chicken soup, sour cream, broth and chicken in a large bowl. Transfer casserole mixture to the prepared dish. Cover and bake 45 minutes. Uncover casserole and bake an additional 10 minutes until bubbly. Remove casserole from the oven and let stand 5 minutes before serving.
Serves 4 to 6.
