Ingredients (view qty in metric system instead)
1/2 cup sugar 1/4 cup unsweetened cocoa powder 3 tbsp. cornstarch 2 cups milk 1/2 cup creamy peanut butter 1 tsp. vanilla extract 1 ripe banana, peeled and sliced
Directions
Combine the sugar, cocoa powder and cornstarch in a medium saucepan. Stir in the milk, peanut butter and vanilla. Cook over medium heat until thickened and bubbly, stirring constantly. Continue cooking an additional 2 minutes. Remove the pan from the heat and pour the pudding into a medium bowl. Cover the surface of the pudding with plastic wrap. Refrigerate pudding overnight until set.
To Serve: Spoon 1/2 of the pudding into 4 serving bowls. Arrange 1/2 of the banana slices over the pudding. Spoon remaining pudding over bananas. Arrange remaining banana slices over the top of the pudding and serve.
Serves 4.
