5 to 6 pound beef brisket 3 tbsp. vegetable oil, divided 5 cups chopped onions 2 large cloves garlic, minced 1 tsp. paprika 3/4 tsp. salt 3/4 tsp. pepper
Directions
Preheat oven to 375 degrees. Place 1 tbsp. oil in the bottom of a large baking pan. Season brisket with salt and pepper and place in prepared pan. Roast brisket 30 minutes. While meat is roasting, heat 2 tbsp. oil in a large skillet. Add onions and cook, stirring, until softened and golden. Reduce heat and cook onions, stirring occasionally, until deep golden, about 20 minutes. Stir in garlic, paprika, salt and pepper and cook 1 minute. Stir in water and bring to a boil. Spoon onion mixture over brisket. Cover pan partially and roast about 3 1/2 hours until brisket is very tender. Remove brisket from oven and let stand 15 minutes. Slice brisket and serve with onion mixture spooned over.
Serves 8 to 10.
