Ingredients (view qty in metric system instead)
4 cups all purpose flour 1 1/3 cups sugar, divided 6 tsp. baking powder 1 tsp. salt 3 large eggs, divided 2 cups milk 1/2 cup melted butter 2 cups fresh or frozen blueberries 8 ounce package cream cheese, room temperature
Directions
Preheat oven to 375 degrees. Grease 24 muffin cups. Stir together the flour, 1 cup sugar, baking powder and salt in a large bowl. Whisk together 2 of the eggs, milk and melted butter in a medium bowl. Add to the flour mixture and stir until blended. Fold in the blueberries. Spoon 2 heaping tablespoonfuls of the batter into each of the prepared muffin cups. Beat together remaining egg, 1/3 cup sugar and cream cheese in a small bowl. Place 1 tbsp. of the cream cheese mixture into the center of each muffin cup. Bake muffins about 15 to 20 minutes until a toothpick comes out clean. Transfer the muffins to a rack and let cool 10 minutes before removing from the muffin pans. Cool muffins completely.
Makes about 2 dozen muffins.
