Ingredients (view qty in metric system instead)
1 cup all purpose flour 3/4 cup wheat flour 3/4 cup brown sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. ground ginger 1/8 tsp. ground nutmeg 1/8 tsp. ground cloves 1 cup peeled, shredded apple 1/2 cup chopped walnuts 1/3 cup dark or gold raisins 1 cup plain yogurt, room temperature 1/3 cup vegetable oil 1 large egg 2 tsp. vanilla extract
Directions
Preheat oven to 350 degrees. Coat the inside of an 8 inch square cake pan with cooking spray. Stir together both flours, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves in a large bowl. Add apples and toss to coat. Stir in the walnuts, raisins, yogurt, oil, egg and vanilla. Transfer the batter to the prepared pan and spread evenly. Bake 35 to 40 minutes until a toothpick comes out clean. Transfer the cake to a rack and cool completely before cutting into squares.
Serves 6 to 9.
