Ingredients (view qty in metric system instead)
Filling: 3/4 cup sugar 2 tbsp. quick-cooking tapioca 2/3 cup water 5 cups frozen, thawed mixed blueberries, blackberries and raspberries 2 tsp. fresh lemon juice
Topping: 1 cup all purpose flour 2 tbsp. sugar 1 1/2 tsp. baking powder 1/4 tsp. salt pinch ground nutmeg 4 tbsp. butter, diced 1/2 cup old-fashioned oats 2/3 cup heavy or whipping cream
Directions
For Filling: Preheat oven to 400 degrees. Combine sugar, tapioca and water in a large saucepan. Cook, stirring, until mixture boils. Add berries and cook 1 minute. Stir in lemon juice. Pour filling into a 9 inch deep-dish pie pan. Cover to keep warm. Prepare topping.
For Topping: Combine flour, sugar, baking powder, salt and nutmeg in a medium bowl. Cut in butter until coarse crumbs form. Stir in oats. Add cream and stir just until moistened. Knead lightly until mixture just comes together. Roll out dough to a 9 inch round and place over hot filling. Bake cobbler 25 to 30 minutes until filling is bubbly and topping is golden. Cool slightly before serving.
Serves 6.
