Ingredients (view qty in metric system instead)
1 1/4 tsp. chili powder 3/4 tsp. ground cumin 4 beef round steaks, about 6 ounces each 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. vegetable oil 1/4 cup water 3 tbsp. tequila 2 tbsp. lime juice 1/4 tsp. finely grated lime peel 3 tbsp. sliced green onion 1 cup seeded, diced tomato 1 tbsp. chopped fresh cilantro leaves
Directions
Heat a large skillet over medium high heat. Add chili powder and cumin and toast 1 minute, stirring constantly. Remove the skillet from the heat. Stir together the toasted spices, salt and pepper in a small bowl. Rub the spice mixture into each side of minute steaks. Add oil to the skillet and heat over medium high heat. Add steaks and cook about 2 to 3 minutes per side for medium rare. Transfer the steaks to a plate and tent with foil. Add water, tequila, lime juice and lime peel to the skillet and boil 30 seconds. Divide the minute steaks between plates and drizzle pan juices over. Garnish steaks with green onion, tomato and cilantro. Serve minute steaks immediately.
