Ingredients (view qty in metric system instead)
12 vanilla wafer cookies two 8 ounce packages cream cheese, softened1/2 cup sugar 1 tsp. vanilla extract 2 large eggs
Directions
Preheat oven to 325 degrees. Line a 12 cup muffin tin with foil cups. Place 1 vanilla wafer cookie in the bottom of each muffin cup. Combine cream cheese, sugar and vanilla in a medium bowl until blended and smooth. Beat in eggs. Pour filling over cookies, filling each cup about 3/4 full. Bake 25 minutes. Transfer muffin pan to a rack and cool cheesecakes completely. Remove cooled cheesecakes from pan and refrigerate at least 2 hours. Before serving, top cheesecakes with pie filling, grated chocolate, whipped cream, nuts, etc.
Makes 12 cheesecakes.
