Ingredients (view qty in metric system instead)
Streusel: 1/4 cup all purpose flour 1/4 cup brown sugar 1/2 tsp. ground cinnamon 2 tbsp. melted butter 1/4 cup chopped pecans
Muffins: 1 1/4 cups milk chocolate chips, divided 3 tbsp. butter 1 cup all purpose flour 2 tbsp. sugar 2 tsp. baking powder 1/2 tsp. ground cinnamon 3/4 cup chopped pecans 1 large egg 1/3 cup buttermilk 1/2 tsp. vanilla extract
Directions
For Streusel: Stir together flour, brown sugar, cinnamon and melted butter in a small bowl until coarse crumbs form. Add pecans and mix well. Cover streusel and set aside.
For Muffins: Preheat oven to 375 degrees. Line a 12 cup muffin tin with paper liners. Combine 3/4 cup milk chocolate chips and butter in the top of a double boiler over simmering water. Stir chocolate until melted and smooth. Combine flour, sugar, baking powder, cinnamon and pecans in a large bowl. Whisk together egg, buttermilk, vanilla and melted chocolate in a separate bowl. Stir egg mixture into dry ingredients until evenly moistened. Spoon batter into the cupcake liners, filling each about 2/3 full. Sprinkle prepared streusel evenly over batter. Bake muffins 20 to 25 minutes until a toothpick comes out with a few moist crumbs. Transfer muffins to a rack and cool. Serve warm or at room temperature.
Makes 12 muffins.
