Ingredients (view qty in metric system instead)
1 bunch parsley, finely chopped 1/4 cup milk 3 medium onions, peeled and diced 1/4 cup all purpose flour 6 large eggs 1 medium zucchini, peeled, seeded and grated 1 large green bell pepper, stemmed, seeded and chopped 1 1/2 tsp. salt 1/2 tsp. ground allspice 1/4 tsp. pepper 1/2 tsp. baking powder 1/2 tsp. white vinegar 1/2 cup solid vegetable shortening, melted 1/4 cup dry breadcrumbs
Directions
Preheat oven to 400 degrees. Stir together parsley, milk, onions, flour, eggs, zucchini, bell pepper, salt, allspice, pepper baking powder, vinegar, and shortening in a large bowl. Stir to blend. Pour onto a greased 9x13 inch baking pan. Sprinkle breadcrumbs over top. Bake 20 minutes until crumbs are browned and eggs are set.
Serves 6 to 8.
