Ingredients (view qty in metric system instead)
12 large eggs 1 tsp. salt 1/2 tsp. pepper 1/4 cup vegetable oil four 6 inch flour tortillas, cut into strips 1/4 cup chopped green onions 1 tbsp. seeded, minced fresh jalapeno pepper 1 cup shredded Monterey Jack cheese 1 cup chopped tomatoes 1/3 cup chopped fresh cilantro leaves
Directions
Whisk together eggs, salt and pepper in a large bowl. Heat oil in a large skillet over medium high heat. Add tortilla strips and fry about 15 seconds until softened. Drain on paper towels. Add green onions and jalapeno to the skillet. Cook, stirring, 2 minutes. Reduce heat to medium. Add egg mixture and tortilla strips to skillet and cook, stirring, about 4 minutes until almost set. Add Monterey Jack, tomatoes and cilantro. Cook, stirring, about 1 minute until eggs are set and cheese is melted. Serve immediately.
Serves 4 to 6.
