Ingredients (view qty in metric system instead)
1 tbsp. sun dried tomatoes 1 tsp. minced garlic 1/3 cup dry bread crumbs 6 ounce can white crab meat, drained and picked through 1/3 cup minced red bell pepper 1/3 cup minced green bell pepper 3 tbsp. minced red onion 1/2 tsp. dried basil 1/2 tsp. dried oregano pinch cayenne pepper 1 large egg, beaten to blend 2 tbsp. olive oil
Directions
Place sun dried tomatoes in a small saucepan with water to cover. Heat to a boil. Remove the pan from the heat and let tomatoes stand until softened. Drain tomatoes and mince. Transfer the minced tomatoes to a large bowl. Add garlic, bread crumbs, crab, bell peppers, red onion, basil, oregano, cayenne and egg. Mix until well combined. Drop 1/3 cupfuls of the crab mixture onto a wax paper lined pan. Form into 4 patties. Heat olive oil in a large skillet over medium high heat. Add crab cakes and cook about 3 to 4 minutes per side until browned and cooked through. Divide crab cakes between plates and serve immediately.
Makes 4 crab cakes.
