Ingredients (view qty in metric system instead)
Dressing: 2/3 cup olive oil 1/3 cup apple cider vinegar 2 tsp. dijon mustard 1 1/2 tsp. sugar 1 1/2 tsp. pepper 1/2 tsp. curry powder 1/4 cup minced fresh parsley
Egg salad: 16 large hard boiled eggs, peeled and chopped 3 tbsp. drained capers 1/2 cup crumbled feta cheese 1/2 cup roasted red peppers, chopped 6 tomatoes, sliced 24 basil leaves
Directions
For dressing: Whisk together vinegar, dijon, sugar, pepper, curry powder and parsley. Slowly whisk in oil to emulsify.
For salad: Gently stir together eggs, capers, feta, and roasted peppers. Carefully stir in dressing to coat. Layer onto your favorite sandwich or artisan bead. Top with tomato slices and basil leaves.
Makes about 12 sandwiches.
