Ingredients (view qty in metric system instead)
5 pounds sweet potatoes 1 1/2 cups chopped onion 3 tbsp. butter or margarine, divided 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. ground nutmeg
Directions
Preheat oven to 400 degrees. Prick potatoes with a fork in several places. Place on a baking sheet and bake about 50 minutes until very tender. Cool. Melt 1 tbsp. butter in a large skillet over medium heat. Add onion and cook, stirring occasionally, 8 to 10 minutes until golden and tender. Peel potatoes and place flesh in a large bowl. Add remaining 2 tbsp. butter, onion, salt, pepper and nutmeg. Mash until smooth.
Serves 8 to 10.
