Ingredients (view qty in metric system instead)
1 pound dried pinto beans, picked through and rinsed 2 cups chopped green onions 1 tbsp. plus 1/3 cup corn oil 1 tsp. salt 1/2 cup fine chopped white onion 1 clove fresh garlic, peeled and minced 2 cups grated Monterey Jack cheese
Directions
Place pinto beans in a large pot with water to cover. Add green onions and 1 tbsp. corn oil and heat to a boil, stirring occasionally. Reduce heat, partially cover and simmer beans about 1 hour until tender. Stir in salt. Partially cover beans and continue simmering about 20 minutes until very tender, adding more water to pot if necessary. Meanwhile, heat remaining 1/3 cup oil in a large skillet over medium heat. Add onion and cook about 8 minutes, stirring occasionally, until golden. Add garlic and stir 1 minute. Add cooked beans with 1/2 cup liquid to skillet and mash coarsely. Add cheese and stir until mostly melted. Serve warm.
Serves 4 to 6.
