Ingredients (view qty in metric system instead)
1 prepared 9 inch pie shell 1 large egg yolk 1 tsp. water 1 cup maple syrup 2 cups canned pumpkin puree 1 tsp. ground cinnamon 1 tsp. ground ginger 1/2 tsp. salt 1 cup heavy or whipping cream 2/3 cup milk 2 large eggs
Directions
Preheat oven to 375 degrees. Stir together yolk and water in a small bowl. Boil syrup in a medium saucepan until a candy thermometer reads 210 degrees. Remove from heat and cool slightly. Whisk together pumpkin, cinnamon, ginger, salt, cream, milk and eggs in a large bowl. Whisk in cooled syrup. Pour filling into pie shell. Brush edges of pie with egg wash. Place pie on a sheet pan and bake about 60 minutes until center is just set. Cool completely on a rack.
Makes one 9 inch pie.
