Ingredients (view qty in metric system instead)
2 1/3 cups yellow cornmeal 1 cup all purpose flour 4 tsp. baking powder 1/2 tsp. salt 1/2 cup cold butter, diced 1 1/3 cups buttermilk 4 large eggs 3/4 cup maple syrup
Directions
Preheat oven to 375 degrees. Butter a 9x9 inch baking pan. Combine cornmeal, flour, baking powder and salt in a food processor. Blend 5 seconds. Add butter and blend until a coarse meal forms. Whisk together buttermilk, eggs and syrup in a large bowl. Add cornmeal mixture and stir batter just until evenly moistened. Transfer to prepared pan. Bake about 45 minutes until top is golden and cracked and a tester comes out clean. Cool in pan on rack.
Serves 8 to 10.
