Ingredients (view qty in metric system instead)
1 cup all purpose flour 1/2 cup ground cashew nuts 2 large eggs, separated 1 1/4 cups milk 1/4 cup vegetable oil 1 tbsp. maple syrup
Directions
Preheat waffle baker. Stir together flour and cashews in a medium bowl. Place the yolks in a separate bowl and whisk to blend. Whisk in milk, oil and syrup. Add the yolk mixture to the flour and stir until just combined but slightly lumpy. Place egg whites in a small bowl and beat to stiff peaks. Fold the beaten whites into the batter. Lightly grease the grids of the preheated waffle maker. Pour about 1/2 cup of the batter onto the prepared grids. Close the lid and cook waffles according to manufacturers directions. Serve waffles warm.
Makes about 6 waffles.
