Ingredients (view qty in metric system instead)
2 cups dry navy beans, picked over and rinsed 1 1/2 cups chopped onion 1 1/2 tsp. minced garlic 1/2 pound chopped bacon 8 cups water 1/2 cup maple syrup 3 drops maple extract 1 tsp. dry mustard 1/2 tsp. paprika
Directions
Place beans, onion, garlic, bacon and water in a 7 1/2 quart oven proof pot. Bring to a boil. Simmer, partially covered, 1 hour. Reserve 1/2 cup cooking liquid. Preheat oven to 300 degrees. Stir together reserved cooking liquid, syrup, extract, mustard and paprika. Stir into bean mixture and add enough water to just cover beans if needed. Bake beans 5 hours, covered, adding more water when needed to keep beans covered.
Serves 4 to 6.
