Ingredients (view qty in metric system instead)
1 firm ripe mango 1/2 of an english or hothouse cucumber 2 tbsp. fine chopped green onion 2 tbsp. fresh orange juice 1 tsp. fresh lime juice 1/2 tsp. olive oil
Directions
Peel and pit mango. Dice into 1/4 inch cubes. Half and seed cucumber. Dice cucumber into 1/4 inch cubes and stir into mango. Stir in onion, orange juice, lime juice, oil, salt and pepper. Toss together well. Refrigerate, covered, 30 minutes before serving. Spoon over chicken, pork, seafood, etc.
Serves 2 to 4.
